A produção industrial no Brasil em frigoríficos está em constante crescimento, gerando milhares de empregos, sendo hoje o país um dos principais exportadores de carnes do mundo. Os frigoríficos possuem setores nos quais os trabalhadores devem executar suas atividades expostos a baixas temperaturas (-35 ºC a 10 ºC). Um dos objetivos desta pesquisa foi analisar quantitativamente o sofrimento dos trabalhadores, com relação aos fatores condições de trabalho, danos e custos físicos em áreas frias em um frigorífico de grande porte de um município do interior do Paraná. Indicar qualitativamente os principais riscos inerentes às atividades executadas em baixas temperaturas, nessa mesma empresa, foi outra meta estabelecida. Na pesquisa qualitativa foram entrevistados por especialistas dezesseis colaboradores diretamente no local de trabalho visando identificar os riscos e as medidas de controle dessas atividades. Os resultados da fase quantitativa foram obtidos por meio da participação de 178 funcionários, através da aplicação dos questionários do instrumento ITRA – Inventário sobre Trabalho e Riscos de Adoecimento, contemplando três fatores (condições de trabalho, danos e custo físico) nesta pesquisa. Os principais resultados demonstram que para o fator condição de trabalho, todos os itens analisados foram classificados no nível crítico; para o custo físico, houve predominância de respostas que indicam a classificação crítica e com relação aos danos físicos, a avaliação se mostrou mais heterogênea. A temperatura nem sempre é a variável que contribui para o sofrimento dos trabalhadores, com influência estatisticamente significativa em seis itens do fator custo físico e sem efeito sobre condições de trabalho ou dano físico.

The industrial production in Brazil in cold storage rooms is in constant growth, generating thousands of jobs, being this country today country one of the main World exporters of meats. The cold storage rooms present sectors in which the workers must execute its activities exposed the low temperatures (- 35 ºC the 10 ºC). One of the objectives of this research was to analyze the suffering of the workers quantitatively, with regard to the factors physical conditions of work, damages and costs in refrigerating chambers in a big cold storage room of Paraná city. Other established goal was to indicate the main inherent risks to the activities executed in low temperatures, in this same company, qualitatively. In the qualitative research, sixteen collaborators had been interviewed by specialists directly in the workstation aiming to identify to the risks and the measures of control of these activities. The quantitative results were obtained through the participation of 178 employees through the application of questionnaires, which included three factors (working conditions, physical damage and cost) of the instrument ITRA - Inventory on Labor and risk of disease. The main results showed that for the factor work condition, all the analyzed items had been classified in the critical level; for the physical cost, it had predominance of answers that indicate the critical classification and with regard to the physical damages, the evaluation was more heterogeneous. The temperature is not always the variable that contributes for the suffering of workers, but it had statistical significant influence in six items of the factor physical cost and without effect on work conditions or physical damage.
